Sorakaya Pulusu


Sorakaya (Bottle Gourd) Pulusu




Serves: 4 people              Cuisine: South-Indian (Andhra Style)
Preparation Time: 30 Minutes


Ingredients:
    • One cup Bottle Gourd (Sorakaya) - Cut into 1 Inch pieces
    • Two Medium Sized Onions – Chopped Finely
    • One Tomato – Chopped finely
    • Two Table spoons of thick tamarind Paste
    • Curry leaves
    • Salt to Taste
    • One Teaspoon Chilli Powder
    • Half Teaspoon Turmeric powder
    • Cooking Oil – 2 Tablespoon
    • Handful of Mustard seeds, Cumin seeds (Jeera) for tadka
    • Garlic 4 pieces Grounded + ½ Teaspoon Jeera
    Cooking Steps:
    1. Put pressure cooker on stove and change the stove settings to high
    2. Add oil, once the oil is hot add mustard seeds, Jeera, turmeric powder and saute for a minute and add the chopped onions and continue till they turn golden brown
    3. Add the chopped tomato, bottle gourd and cook for 2 – 3 minutes till the oil comes to the top, then chilli powder, salt, Tamarind paste and ½ glass of water
    4. Close the cooker and wait for one whistle and turn off heat and put aside for a few minutes and wait for the steam to release.
    5. Put the cooker on medium flame for another 2 minutes after adding pounded 4 garlic pieces and Jeera powder
    6. Turn off the heat and garnish with coriander before serving
